“At Maydan West Adams, Yhing Yhang joins the ranks of stellar vendors in D.C. restauranteur Rose Previte’s market, which already anticipates Lugya’h, a Oaxacan stand from Poncho’s Tlayudas chef Alfonso “Poncho” Martinez. The market will host Previte’s Michelin-starred restaurant Maydan, a West Coast location of Compass Rose, and three other new restaurants that have yet to be announced.
Inspired by his upbringing in Bangkok and the Thai capital’s second-hand Chatuchak Weekend Market, Arpapornnopparat will meld grilled chicken and pork on a menu, proteins often sold by the pound and packed for takeaway or eaten on-site in Thailand. He and Yuon were also inspired by the smoky flavors of Texas barbecue, but wanted to serve tangy, acidic, and sweet flavors to counter the rich meats. For Yhing Yhang, he’ll marinate pork jowl in honey, cilantro root, and garlic, and slice it like Chinese char siu pork. The chicken will be marinated in lemongrass, cumin, garlic, and cilantro root, and then blistered over wood fire..”
